(63) Roasted Kohlrabi

I’d like to introduce you to my new friend… kohlrabi! Where have you been all my life?!?!

I honestly had NO idea what to expect with these guys, but I figured I’d paid for them, so I better eat them, right?! I cut the green tops off and skinned, um I mean peeled, them until they were cute little green balls.

Then I cut them into slices and then into half moons. It kind of felt like we were cutting cucumbers…

Tossed the cut kohlrabi with some olive oil (just enough to get it wet), a sprinkle of salt and a sprinkle of freshly ground pepper. I roasted them for about 20 minutes at 425 degrees until they were fork tender and starting to brown. They taste surprisingly like roasted cauliflower! YUM! We were all big fans. I can’t believe I’ve never made kohlrabi before! Please try this and tell me what you think! I think you’ll like it!
