Ahhh the new year is upon us!! The company has all gone home and now we’re back to the real world. Our office is closed until the 2nd (yay!) so I have a few days to work on my menu and prepping. Here’s my plan, what’s yours?
Sunday: Family had pizzas and salad, I had an antipasto salad (no cheese, booooo!)
Monday: Happy New Year’s Eve!!! Steaks, steamed shrimp, roasted potatoes, fresh green beans
Tuesday: Traditional New Year’s Day meal for our Pittsburgh meets the south: Pork and sauerkraut (this year it will be kielbasa), collard greens, black eyed peas
Wednesday: Steak and Guinness pie – I am making this recipe, but in place of the puff pastry, I will be using a non-dairy pie crust (most of the premade ones at the store are). Will serve some green peas and maybe some mashed potatoes on the side
Thursday: Spaghetti and salads
Friday: Cobb salads (we got this delish honey turkey breast at Costco that we need to use up!)
Saturday: Slow-cooker pork chops with apple, onion, sauerkraut (yes, it’s BOGO at Publix this week! LOL) served with egg noodles
