Ahhh dinner. Back to the grind of a full week of work and activities, yada yada. I’ve been in the kitchen today prepping for the week, so dinners should go pretty smoothly this week *fingers crossed*.
Here’s my plan!
Sunday: Ham, mac & cheese for the dairy eaters and roasted cauliflower for me, orange glazed carrots
Monday: Lemon Pepper Tilapia, roasted potatoes, steamed broccoli
Tuesday: leftover ham, etc.
Wednesday: Spanish Style Stewed Chicken Thighs, rice, and maybe some cinnamon baked apples for a treat!
Thursday: Spaghetti and meatballs, salad (Sydney’s request!)
Friday: Pork chops (not sure how I will fix them yet), egg noodles, frozen peas.
Today I have made the ham, macaroni, cauliflower, carrots, broccoli, and meatballs. Tuesday night I plan to chop/prep for Wednesday night’s dinner and the rest will be smooth sailing!! Have a great week 🙂
PS: I linked to my go-to recipe for meatballs. I have come to discover that most all breadcrumbs have milk in them (grrr) so I made my own. I also leave out the parmesan. Nobody has complained so far LOL. Also, if I have a jar of marinara open, I use that instead of tomato sauce. These freeze really well, too!
